SWADIST VEGETABLE STEW



INGREDIENTS

1.  Mixed Vegetables (Cauliflower, French Beans, Carrot) - 3 cups
2.  Peppercorns - 1 cup.
3.  Coconut Milk - 3 cups.
4.  Sliced Ginger - 2 tsp.
5.  Sliced Green Chilli - 2 tsp.
6.  Sliced Onion - 1 cup
7.  Curry Leaves - 12 nos.
8.  Cornflour - 2 tbs.
9.  Water - 8 tsp.
10. Mustered oil/Edible Oil - 4 tsp.
11. Salt - To Taste.


PROCESS TO PREPARE
1. 2 tbs. cornflour mixed with 4 tsp. water and 2 tsp oil and paste them.
2. Add the vegetables along with 4 tsp. water  in a microwave safe bowl and microwave 5 minutes at 100% power and remove and keep aside.
3. Add the oil 2 tsp., pepper corns, ginger and chilli in another microwave safe bowl and microwave for 3 minutes at 100% power.
4. Add the onions and curry leaves and mix well.and microwave another 5 minutes, at 100% power, stirring once after 3 minutes.
5. Next add cooked vegetables, coconut milk, cornflour paste and salt and microwave again for 3 minutes at 100% power.
6. Lastly, serve hot appams or rice.


Special Tips - A South Indian vegetable cooked in coconut milk and flavoured with ginger, served traditionally with appams.
